A simple salad
The freshest of salad leaves from your garden or Gairdín Eden
A few slices of Jack McCarthy‘s air-dried beef
Gabriel or Parmesan cheese
A small clove of garlic, crushed
Good quality extra virgin olive oil
Sea salt, freshly ground black pepper
Wash and dry the salad leaves. Pile them into a bowl, with the slices of air-dried beef and thin shavings of cheese. Mix the crushed garlic clove with some lemon juice, then pour in enough olive oil to make a rich, tangy salad dressing. Season to taste, pour over the salad and toss well. Eat and savour.
