    This looks delicious – I too am a fan of dinners thrown together in roasting tins! Yum!

      I’ve a bad habit of landing the roasting tin into the oven and then getting involved in gardening outside or heading off for a longer-than-anticipated trip to the shops – at least these dishes are very forgiving!
