Caroline

Food writer, broadcaster and author Caroline Hennessy has been focused on food and writing since editing Ireland’s first food website for RTÉ in 2000. Chair of the Irish Food Writers’ Guild, she established the award-winning Bibliocook: All About Food in 2005, is the author of two books about beer and food and has a column in the Irish Examiner in which she writes about small food producers and the ways in which they develop and maintain a sustainable local food system.

    Don’t they look great? I really like his idea of using two types of apples in the mince meat. You got all your mince pies ready already?!

    Er, belatedly, no. It was all a rush. At time of writing am still wondering when I’ll get around to writing December’s unwritten cards.

    I think you could safely get away with the non-writing Christmas cards at this stage! I eventually made mincemeat about a week before Christmas, handed jars on to my mother for her mincemeat store (always contributed to by herself and my aunt!) and eventually used some of it for a really simple polenta-based Mincemeat Shortbread which we took round to the neighbours on New Year’s Eve. Much easier than fiddling around with pastry cases!
