Turkey all eaten, apart from the best bit: the leftovers to be had on toast, with plenty of stuffing, Cranberry Relish and some Cooleeney camembert (from the Tipp Producers night) melted on top.
That’s all I’m going to say – watch out for my final turkey article in the Irish Examiner on Saturday 18 December!
Food writer, broadcaster and author Caroline Hennessy has been focused on food and writing since editing Ireland’s first food website for RTÉ in 2000. Chair of the Irish Food Writers’ Guild, she established the award-winning Bibliocook: All About Food in 2005, is the author of two books about beer and food and has a column in the Irish Examiner in which she writes about small food producers and the ways in which they develop and maintain a sustainable local food system.
Such a tease, Caroline!! You are right – the best part of Thanksgiving (or Christmas here) is the turkey leftovers. My dad makes a mean turkey salad sandwich, which of course I missed this year. I’m going to buy some turkey just to make your sandy though!
I would be completely prepared to cook extra turkey just for the leftovers! Myself and Little Missy just finished the last little bits for lunch today. Now I’ll just have to pine until 25 December…
